I was blessed with a very cute and accomplished Greek mother-in-law.  She loved having her family around her, and also cooking for everyone.

I learned a lot and I give below one of my favourites - Spaghetti Bolognaise, which I have just made for tonight's meal:

400g Steak Mince
100g Lamb Mince
1 large Onion (chopped)
Dash Salt and Pepper
1 dessert spoon Olive Oil
2 cubes Mutton Stock
2 teaspoons chopped Garlic
2 Carrots grated
1 large tin chopped Tomatoes
Small (but not tiny) tin Tomato Paste
Three quarters packet of Spaghetti
Boiling Water
Sprinklings of Parmesan Cheese (to serve)

Taking a very large saucepan add Olive Oil.  Add chopped Onion and cook medium heat, slowly until very light brown.  Add chopped Garlic.

Add Mince and braise slowly in pan (meantime boiling kettle with water in readiness).  When Mince browns add
crumbled Cubes to Mince and Onion mixture.  Season with Salt, Pepper and Mixed Herbs.

Pour half a kettle of boiled water into pan and mix with wooden spoon .

Add grated carrot mixture.

While cooking open large tin of chopped Tomatoes and include in mixture.  Then the Tomato Paste.

As meat/sauce mixture cooking, boil kettle with water in readiness for further large pan in which to cook Spaghetti.

Place Spaghetti, with lightly salted water, in this pan and cook at medium heat.

When Spaghetti ready, take to sink and drain carefully into a collander.  Thereafter run a cold tap over the colllander containing the Spaghetti.  Shake collander until water drained then place again into now empty large pan.   Place on wooden board next to stove.  Sprinkle Spaghetti mixture with Nutmeg.

Place large Frypan with dabs of Butter onto medium heat and when liquid mixture cooked but not burning, take off cooker, and pour from the collander into this Frypan.  The top area of the Spaghetti will not have nutmeg, and so add sprinkling of nutmeg to top of the Spaghetti Mixture.  

Your Meat/Sauce mixture should now be ready on the stove and can now be taken off the heat.

When you are ready to serve your meal, ensure you have sprinklings of Parmesan Cheese to serve with the Spaghetti Bolognaise meal.
